Venison Recipes

Three Cheese Enchiladas

Serves 8

1 lb Venison -- ground
1-8 oz pk Cream Cheese
2 C Monterey Jack Cheese -- shredded
2 C Cheddar Cheese -- shredded
1 tsp Cumin
10 Soft Flour Tortillas
Salad Oil
1 C Picante Sauce
1 pk Taco Seasoning
Shredded Lettuce
1 Tomato -- diced

Mix half the Cheddar and Monterey Jack cheeses and set aside. Brown venison in a little salad oil in fry pan. Season with taco seasoning, then cool. Add remaining cheeses, 1/2 C picante sauce, and cumin. Put 1/2 C of mixture into each tortilla and roll up. Place seam-side down in 9X13-in greased baking pan. Top with reserved cheese and bake 30 minutes at 350-degrees. Serve with shredded lettuce, tomate, and picante sauce.
